Directions

Combine the oregano, the remaining shallot, red wine vinegar, and extra virgin olive oil in a bowl and reserve.
Place all of the meats, cheeses, vegetables, and rolls on a large board or platter with the herbed mayonnaise and vinaigrette in bowls.
