Preheat the oven to 400ºF.
Lay out the puff pastry sheets and layer 4 slices of provolone on each.
Top each sheet with 20 slices of pepperoni.
Gently roll the puff pastry sheets into a spiral, rolling away starting with the edge closest to you.
Once the puff pastry is rolled, slice each into about 2-inch thick slices and place cut- side down on a parchment-lined baking sheet.
Bake for about 20 minutes or until golden brown.
Remove from the oven and sprinkle the Romano cheese over the top.
Serve warm with pizza sauce on the side for dipping.
