Preheat the oven to 375ºF.
Heat a Dutch oven over medium-high heat.
Add the pepperoni and sauté until just beginning to brown.
Add the butter, onion, celery, fennel, and garlic. Sauté until beginning to soften.
Add the chicken broth, oregano, parsley, and rosemary, and bring to a simmer.
Add the diced ciabatta and remove from the heat.
Transfer the stuffing to a greased baking dish and bake for 15-20 minutes or until heated through and golden brown. Serve hot.
