Directions


  1. Preheat the oven to 400ºF.

  2. Cook pasta according to package instructions. Drain and rinse with cold water, reserving 2 cups of pasta water.

  3. While the pasta is cooking, place prosciutto slices on a parchment-lined baking sheet and bake for 7-10 minutes or until crispy. Remove from the oven and reserve.

  4. Heat a Dutch oven over medium-high heat.

  5. Add the extra virgin olive oil, shallots, and garlic. Sauté until beginning to soften.

  6. Deglaze the pan with the wine. Add the clam broth and bring to a simmer.

  7. Put in the pasta and clams and bring to a boil. Add some pasta water, if needed, to make the sauce.

  8. Add the clams, oregano, red pepper, lemon juice, and butter. Toss to combine.

  9. Transfer to a serving bowl and garnish with the parsley, basil, crispy prosciutto, and parmesan cheese. Serve hot.
