Directions

  1. Heat grill to medium-high heat.

  2. Preheat the oven to 375ºF.

  3. Place the slices of prosciutto on a parchment-lined baking sheet and bake until crispy, about 6 minutes.

  4. Remove from the oven and allow to cool.

  5. Combine the garlic powder, onion powder, oregano, kosher salt, and black pepper.

  6. Season the burger patties on both sides with the rub.

  7. Grill for 5 minutes on each side or until desired doneness.

  8. While the burgers are cooking, combine the pesto and mayonnaise and reserve.

  9. When the burgers are about done, grill the pepperoni slices until crispy and top each with two slices of crispy pepperoni, then the mozzarella cheese, and allow to melt.

  10. Top the burgers with the crispy prosciutto and remove from the grill, allowing to rest about 4 minutes.

  11. While the burgers are resting, dress the top and bottom halves of the rolls with the pesto mayonnaise.

  12. Place a burger on the bottom half of each roll. Top with tomato and lettuce, then place the tops of the rolls on each burger. Serve hot.
